Fiery “Cookie” Caramel Corn
This dish is inspired by “Cookie Lyons” from the hottest TV show out – Empire. The blend of flavors speak to Cookies fiery side and blends in elements of sweetness, presented with a fashionable flare. From the sweetness of the caramel and the spice from the Cajun roasted walnuts to the crunch from the waffle cookies, this is the perfect treat at your Empire viewing parties!
Fiery “Cookie” Caramel Corn

6 cups popped popcorn
2 cups walnuts
2 tablespoons unsalted butter
15 individually wrapped caramel candies
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1 tablespoon Cajun spice blend
1/3 cup chocolate covered waffle cookies
(or your favorite crispy cookie), chopped -
Combine walnuts, popcorn, Cajun spice, cinnamon, kosher salt and waffle cookies together in a bowl.
Microwave butter until melted. Using a double boiler, slowly melt your caramel candy. Add to mixing bowl with popcorn and other ingredients. Fold until fully incorporated.
Transfer mixture to a baking sheet lined with parchment paper and put into a 200 degree F oven. Bake for 30 minutes, stirring once halfway through. Do not burn.
Serve warm or at room temperature.
